If it was up to me - I'd work up a whole series of scenarios outlining key topics and associated workflows through delivery - to illustrate specifically both the tangible or intangible. Use those scenarios to produce a short film(s) or motion graphics piece that that tells the story you want then coordinated with the hardgoods/virtual goods to student have expertise in producing. think of a coordinated array of HD displays + audio amidst print display and installation. a la tradeshow-esque.

that's how i'd roll. tap some new media resources, some film nerds, your print peeps. and BOOM, you'll knock people out.

"Arguably, the final products could be evaluated on choice of media and production aspects, but many of these factors are controlled by the assignments."

Maybe the controlling factors ("You need to print this on X with Y") should be removed from the assignment guidelines. This will allow the students to analyze the requirements of the final product and choose the media and imaging system that will deliver the best results.
